Our Chef

Our chef, Aylin, a long-time Cihangir local, has spent over 20 years cooking the soul of Turkey and the Mediterranean. From bustling meyhanes to quiet Aegean villages, she’s gathered recipes, techniques, and a deep love for honest ingredients.

Plant-forward by heart yet never dogmatic, Aylin turns the season’s best vegetables, fish from trusted suppliers, and free-range poultry into plates that feel like home—only brighter, bolder, and served with her unmistakable warmth.
